Sunday's All Egg Breakfast : Cinnamon French Toast and 2-Minute Microwave Poach Egg



My husband woke up this morning asking if we should get drive-through breakfast. I was hesitant. In light that he is still recovering from the long distance run yesterday, I decided to whip up a Sunday's recovery meal for him - All Egg Breakfast : Cinnamon French Toast & 2-Minute Microwave Poach Egg. 



Ingredients (enough for 6 slices of bread) :

  • 3 eggs for cinnamon french toast
  • additional eggs for 2-minute microwave poach eggs
  • 6 slices of white bread 
  • 1/4 tsp grounded cinnamon
  • 2 tsp sugar
  • 1/4 tsp salt
  • 4 tbsp water
  • cooking oil
  • bacon bits
  • arugula rocket leaves

(tsp = teaspoon; tbsp = tablespoon)    



Method :

Crack 3 eggs into bowl. Add 1/4 tsp grounded cinnamon, 2 tsp sugar, 1/4 tsp salt, 4 tbsp water. Add more grounded cinnamon if you prefer a richer flavour.
Beat the egg mixture with chopsticks.
Heat skillet/pan with 1 tbsp cooking oil.
Soak 1 piece of white bread in egg mixture. 
Soak both sides of each slice just before frying - one at a time. 
Slowly place bread into skillet/pan and let it fry in medium heat for a minute. Try not to flip it before the minute is up as the toast & egg may stick to the pan. 
Flip and pan fry the other side in the same manner. Remove from skillet/pan once you are happy with the colours. Repeat the same process for all slices of breads.
If you have excess egg in the bowl after making the cinnamon french toast, don't waste. Try heating a little oil in the skillet/pan again and pour the remainder into it.
It would give you a thin crepe like fried egg in a short while.
Flip and fry the other side in the same manner. Turn off heat when egg is ready.
To make a perfect 2-minute poach egg in microwave oven, oil the bowl or plate with a little cooking oil and crack in an egg (just one egg in each bowl or plate). Ensure that the egg yolk is intact.
Use a toothpick to poke a small hole in the egg yolk. Do not break the egg yolk.
Put the bowl with egg into microwave oven. Cover egg with a microwave lid. Set microwave oven to 180 degrees celsius (356 degrees fahrenheit) and 2-minute timer. 
Remove bowl from microwave oven after 2 minutes. This is how the egg should look like. Continue on a 10-seconds segment if you find the egg too raw for your personal liking.
Assemble toast by sprinkling a little bacon bits.
Top with arugula rocket leaves and more bacon bits. You may choose to eat now without the poach egg. It is just as good. 
And finally the poach egg. Voila!.....a sumptuous and tasty breakfast!
The runny egg yolk makes the toast perfect. With this homemade breakfast to start our day....our Sunday just got better!
