Chicken & Pork Satay (Chicken Rice Paste Marinade)

I do not know if anyone else encounter the same problem as me....as my parents age (they are very old now ), their palate for food are becoming like children. In their case, strictly no spicy food now. They wouldn't even give their younger days' favourite curry a chance. It's definitely challenging for me to cook for the entire family nowadays. I have to be more creative in my rendition of traditional spicy dishes for the family. This Chicken & Pork Satay is one of which that I attempted using Dancing Chef's Hainanese Chicken Rice Paste. Not spicy and Yes!...different from tradition but I must say it's very easy and very palatable! I also made the Hainanese Chicken Rice Chili for my husband and myself. As I was writing this post....my family was feasting happily and heartily. Mother's Day is coming and we had an early mini celebration as my husband would be travelling for work...but Mother's Day/Father's Day or not...I'm always happy to cook for my parents and my love ones. These are the moments that I truly treasure.

Ingredients for Satay Meats (yield about 30 sticks chicken & 30 sticks pork) :
  • 1/2 packet Dancing Chef Hainanese Chicken Rice Paste for Chicken
  • 1/2 packet Dancing Chef Hainanese Chicken Rice Paste for Pork
  • 800g boneless chicken thing meat (cleaned and cut to strips)
  • 600g pork belly meat (cleaned and cut to strips)
  • 1/2 to 1 tsp sugar for chicken (or to taste)
  • 1/2 to 1 tsp sugar for pork (or to taste)
  • Cooking oil to grease the pan

(tsp = teaspoon; tbsp = tablespoon) 


Method :
  1. Use a food mallet to tenderise meats if necessary.
  2. Add seasonings and meats into 2 bowls respectively (1 bowl for chicken and 1 bowl for pork)
  3. Marinade all meats in chiller for 1 hour. 
  4. Meanwhile, use a brush to oil bamboo skewers
  5. Before cook, remove meats from chiller.
  6. Skew all meats with bamboo sticks.
  7. Turn on medium heat. Brush cooking oil to grease grill pan.
  8. Grill meat skewers on grill pan. Brush oil onto meats occasionally until fully cooked and meat caramelised nicely.
  9. Serve whilst hot with or without sauce(s).

Air Fried Chicken & Rice Ngoh Hiang 鸡丝五香饭卷

I've given the traditional Chinese Five Spice Rolls 五香卷 a healthier tweak by using minced chicken instead of the normal minced pork and prawns. I've also air-fried the rolls instead of deep frying them the traditional way. Xndo Zero Rice has been used to make my Ngoh Hiang rolls more satiable to the stomach (比较有饱足感) so that I do not need to prepare other dishes for a simple yet hearty meal. This Air Fried Chicken & Rice Ngoh Hiang 鸡丝五香饭卷 is absolutely pleasing to the palate. You can dip it in any preferred dressing(s). Personally, I love dipping my Ngoh Hiang rolls with just Balsamic Vinegar...Yumz for the layering of flavours!

Ingredients for Ngoh Hiang (enough for 12  to 15 rolls) :
  • 12 to 15 pcs dried bean skin (cut to size at approx. 20 x 15 cm each)
  • 2 packets Xndo Zero Rice. Each box contain 4 packets. 
  • 300 gm minced chicken
  • 1 carrot (finely chopped)
  • 1 mid-large onion (finely chopped)
  • 5 pcs dried mushrooms (pre-soaked and finely chopped)
  • 2 tsp finely chopped coriander
  • 1 tsp minced garlic
  • 1 tsp minced ginger
  • 1 tsp Chinese 5 spice powder
  • 1 tsp ikan bilis/anchovies powder
  • 2 tbsp light soy sauce
  • 1/2 tsp salt
  • 2 tsp sesame oil
  • 1 tsp sambal belachan chili paste (optional)
  • a dash of pepper (optional)
  • 1 beaten egg

Dressing/Dip :
  • Balsamic Vinegar or/and Chili Sauce

Garnishing :
  • a drizzle of olive oil
  • red/green cut chili
  • finely chopped coriander

(tsp = teaspoon; tbsp = tablespoon)    


Method : 
  1. Mix all Ngoh Hiang ingredients into a large bowl (except for Dried Bean Skins) till even and slightly gluey.
  2. Spoon 2 to 3 tbsp mixed Ngoh Hiang ingredients onto each piece of dried bean skin. 
  3. Wrap and roll. If need to, spread a little beaten egg to seal and secure the rims.
  4. Arrange wrapped Ngoh Hiang rolls on a greased stainless steel rack.
  5. Send to air fry at 180C for first 15 minutes and 200C for another 15 minutes (or till desired colour is achieved).
  6. When ready, remove Ngoh Hiang rolls from air fryer. Allow to rest for 5 to 10 minutes before cutting to serve.
  7. Plate, drizzle with desired dressing and garnish. 
  8. Serve whilst hot. 

Tip : Freeze the other uncooked Ngoh Hiang Rolls apportioned in zip log bags. Thaw and air fry as and when you are ready to cook.

Japanese Curry with Beef (From Scratch) 日式牛肉咖喱

I used to buy instant Japanese curry paste in-a-box to cook whenever I wanted to cook Japanese Curry with Beef 日式牛肉咖喱 in the past. If I didn't remember wrongly, each box of instant paste costs between S$4+ to S$7. I came to realisation that it's not difficult to cook this curry roux on my own. If you go through my list of ingredients below, you'll understand the very substantial cost savings to cook on your own. I like it that we can choose to avoid MSG and preservatives when it's home-cooked! More importantly, husband said it tasted great and identical to the real stuff! Yes, you'll need to buy a few types of spices at about S$1+ each. However, each packet of spice would at least last you to cook few times more on the same dish or other dishes!

I cooked the curry roux, shallow fried the potatoes and browned the beef in my new Tramontina 24cm Stainless Steel Frying Pan with internal Starflon Plus Coating. The light weight frying pan really make cooking enjoyable as it's easy for me to toss the ingredients. I was also impressed by the even distribution of heat that resulted in faster and uniform cooking. My beef cheek cubes were browning very nicely in the pan. After cooking, the stainless steel exterior made the pan so presentable to be served on my dining table too!

  • Care Instructions:
    • Do not cook with sharp pointed utensils.
    • Do not wash with scratchy sponges.
    • First Use: - When using the frying pan for the first time, wash, dry and grease the interior with cooking oil. Next, heat it up on a low temperature for two to three minutes, depending on the frying pan size. Leave it to cool, then wash it with a soft sponge and mild detergent in lukewarm water. Rinse and dry as usual. Repeat the first use procedure whenever the dishwasher is used. Repeat this procedure periodically to better conserve the lining.

Main Ingredients (enough for 4 pax) :
  • 500 to 600 gm beef cheeks (cut to cubes)(you may use chicken if you prefer)
  • 2 to 3 carrots (chopped to about 1-inch thickness)
  • 3 potatoes (cut to cubes)
  • 1 medium sized onion (julienned)
  • 3 garlic cloves (minced)
  • 1 tsp minced ginger
  • parsley flakes (for garnishing)(optional)
  • cooking oil (for shallow fry)
  • steamed rice

Curry Roux :
  • 60 gm unsalted butter
  • 1/3 cup plain flour
  • 2 tbsp curry powder (I used Madras curry powder from Mustafa @ S$1.10/100 gm packet). (Use SB brand curry powder if you prefer Japanese authentic.)
  • 1 tbsp garam masala (I used garam masala from Mustafa @ S$1.50/100 gm packet)
  • 1 tsp cayenne powder (optional)(omit this if you do not want your curry spicy, I prefer to add this)

Other Curry Gravy Seasonings (exclude curry roux) :
  • 1 tbsp soy sauce (or to taste)
  • 2 tbsp tomato ketchup (or to taste)
  • 1 tbsp Worcestershire sauce (or to taste)
  • 2 tbsp honey (or to taste)
  • 1 tsp salt (or to taste)
  • 250 ml home-made or store bought chicken broth (if really no choice, dissolve 1-2 tsp ikan bills stock powder with 250 ml water)
  • 2 to 3 cups water (subject to your preferred thickness for the curry)

Method : 
  1. Heat pan and melt butter at low-medium heat.  
  2. Add plain flour when butter's melted. Stir to blend butter and flour for few minutes till even.
  3. Fold in curry powder, garam masala and cayenne powder. Stir and mix the roux evenly. If the roux get too dry, add water 1 tsp at a time and continue stirring. After about a minute, the curry roux is ready. Scoop and set aside.
  4. Heat a little cooking oil in frying pan again. Fold in potato cubes and fry till all sides are slightly golden brown. Remove from pan and set aside.
  5. Fold in beef/chicken cubes and pan sear on all sides till browned. Remove from pan and set aside.
  6. In a deeper pot, heat a little cooking and stir fry onions till they turn translucent. 
  7. Toss in minced garlic and ginger and sauté till aromatic.  
  8. Add all curry gravy seasonings into pot and lightly stir.
  9. Fold in curry roux. Stir till curry roux is dissolved and blended into mixture.
  10. When curry starts bubbling, fold in beef/chicken cubes again.
  11. Cover lid and allow to simmer at low heat for min. 1 hour or till beef cubes turn tender. Towards last 20 minutes, fold in potatoes and carrots, continue to simmer till all's cooked and to your desired texture. Add more water if curry turns too thick. If necessary, add salt/honey in accordance to your taste preference.
  12. Turn off heat, leave the lid covered for another 10 minutes before dish out, garnish and serve hot immediately with steamed rice.

Note : 

*Do note that if you're cooking with chicken instead of beef, much shorter simmering time is required. Do adjust cooking time accordingly.

* Simmering time required for beef is subject to cut and sizes. Adjust duration accordingly.

* Check curry occasionally while simmering. Add more water if curry turns too thick. Otherwise, curry may burn at the bottom.
