Coconut Fruity Ice-Cream Lollies 椰奶水果冰棒



Do you know that it's so fun and magical to coat your coconut ice-cream lollies with fresh grated coconut when you eat them? I super love the taste and texture of my  Coconut Fruity Ice-Cream Lollies 椰奶水果冰棒! Refreshing and mouthwatering fruity ice-cream made possible with Ayam Brand Coconut Milk. You also wouldn't want to miss the real strawberry and pineapple bits embedded in each lolly.

Pink : Strawberry + Coconut Milk + Honey Flavour
Pale Yellow : Pineapple + Coconut Milk + Honey Flavour

The best part of this sweet treat - there's no sugar and colourings used!


Ingredients (enough for 6 Ice-Cream Lollies) :

Pineapple Flavour

  • 1 slice pineapple (diced)(for pineapple flavour)
  • 3 tbsp Coconut Milk 
  • 1.5 tsp honey
  • 75 ml water

Strawberry Flavour
  • 150 gm strawberries (diced)(for strawberry flavour)
  • 3 tbsp Coconut Milk 
  • 1.5 tsp honey
  • 75 ml water

Other Requirements
  • 6 pcs ice-cream pop moulds (available at departmental stores)
  • 5 tbsp fresh grated coconut
  • Total required Coconut Milk about 150 ml.

(tsp = teaspoon; tbsp = tablespoon) 

Method :
  1. Cook 150 ml coconut milk in a saucepan at low heat. Stir it once in a while. Turn off heat immediately once it starts to bubble at boiling point.
  2. Scoop 2/3 portion of diced pineapples and 3 tbsp cooked coconut milk into blender. Add 1.5 tsp honey and 75 ml water. Blend all well and transfer to a bowl or cup. Set aside.
  3. Scoop 2/3 portion of diced strawberries and 3 tbsp cooked coconut milk into blender. Add 1.5 tsp honey and 75 ml water. Blend all well and transfer to a separate bowl or cup. Set aside.
  4. Fill the ice-cream pop moulds in accordance to your preference. Remember to add the remainder diced fruits into the pop moulds. 
  5. Allow to freeze till hardened before adding the next layer of flavour/colour and diced fruits.
  6. Remember to insert ice-cream stick into each pop mould.
  7. Freeze for minimum 5 hours before consumption.
  8. Remove ice-cream lollies from pop moulds before serve.
  9. Coat or sprinkle surface of ice-cream lollies with fresh grated coconut. 
  10. Enjoy!
