Garlic Butter Prawns 蒜香牛油虾

It is the Chinese 人日 today. According to the Chinese calendar, this 7th day of Lunar New Year is also the birthday of all mankind. It gives us a good reason to dine with our family members. We just have to give it to our ancestors for their wisdom. They created so many occasions for the family to 'eat together' in this Spring festival month!

Since it is an auspicious day for all, we must eat something meaningful, something good. It is a no brainer for me to cook prawns for the family today as it symbolises 嘻哈大笑, or simply put it - Joy and Laughter. It can be tricky to cook for old folks and ourselves at the same time. In this instance, my husband prefers pasta whilst my parents want rice.... This Garlic Butter Prawns 蒜香牛油虾 is simple and versatile. It satisfies my old folks to take the dish with steamed rice and I make my husband happy by serving him Garlic Butter Prawns Pasta.

Ingredients (enough for 4 pax to go with steamed rice or pasta) :

  • 16 pcs of large whole prawns (cleaned and pre-marinated with 1/2 tsp salt, 1 tsp sugar, 1/2 tsp grounded black pepper)
  • 10 cloves garlic (50% thinly sliced, 50% finely chopped)
  • 2 shallots (chopped)
  • 2 dried chilli (chopped)
  • 1/3 of a lemon
  • parsley or coriander (optional)(finely chopped for garnishing)
  • 2 to 3 tbsp salted butter (in accordance to your preference)
  • 1 tsp crispy sambal shrimps or dried chilli flakes

(tsp = teaspoon; tbsp = tablespoon)

Method :
  1. Melt butter in medium heat frying pan/wok.
  2. Add aromatic ingredients (garlic, shallots, dried chilli, crispy sambal shrimps/dried chilli flakes).
  3. When the ingredients turn aromatic, fold in marinated prawns.
  4. Gently toss prawns till fully cooked. Prawns would be cooked in just few minutes.
  5. Squeeze lemon juice, turn off heat/fire and give it one final toss.
  6. Transfer for plating and garnishing.
