Can we really cook on busy days? I normally would not cook after my monthly cancer treatments. However, there would be times that I simply crave for home-cooked food. It was one such moment this evening. With the ingredients and bottled garlic bean paste I found in the refrigerator, Stir Fry Garlic Bean Paste with Bitter Gourd, Pork Slices and Prawns 什锦蒜蓉豆䜴炒苦瓜 was one easy dish to whip up.
This all-in-one dish (that goes well with steamed rice) would only take less than 20 minutes to prepare and cook.
Ingredients (enough for 3 to 4 pax with steamed rice) :
- 200 gm sliced pork (cut against grains)
- 12 pcs mid sized prawns (devein and de shell)
- 1 small-mid sized bitter gourd (sliced)
- 4 cloves of garlic (pressed)
- 2 slices of ginger (pressed)
- 1 tbsp black bean garlic paste 蒜蓉豆䜴酱 (available from supermarkets)
- 1/8 tsp salt
- 1.5 tsp sugar
- cooking oil
Pork Meat Marinate :
- 1/4 tsp salt
- 1/2 tsp sesame oil
- 1 tbsp light soy sauce
Prawn Marinate :
- few drops of sesame oil
- 1 tsp light soy sauce
(tsp = teaspoon; tbsp = tablespoon)
Tip : Do not have to add water. The bitter gourds/bitter melons should produce enough water content to make the garlic bean sauce when cooked.
Method :

Heat 2 tbsp cooking oil at medium heat. Add ginger and garlic. |

Fold in 1 tbsp black bean garlic paste 蒜蓉豆䜴酱. Give it a quick stir. |
|
Fold in pork slices. |
|
Stir fry 1 minute till pork about 70% cooked. |
|
Toss in bitter gourd slices. |
|
Add 1/8 tsp salt and 1.5 tsp sugar. Stir fry another 1 minute till bitter gourd slices start to soften. |
|
Add prawns. |
|
Stir fry 1 more minute till all ingredients are fully cooked. |
|
Serve hot with steamed rice. |
