This Homemade Air Fried Char Siew 自制蜜汁叉烧 is one easy recipe. Bearing in mind that my family members prefer Char Siew that's more 'fatty' as it's less dry/tough and the meat more succulent when cooked, I would usually opt for pork belly, pork shoulder or pork armpit (不见天). My personal favourite is the latter pork armpit (不见天) for its texture and flavour. What's yours?
Main Ingredients :
- 500 gm fresh pork armpit/ or pork belly/ or pork shoulder (I used pork ‘armpit’ 不见天)
- 1 tbsp Hoisin sauce (or to taste)(for seasoning)
- 1 tbsp oyster sauce (or to taste)(for seasoning)
- 1 to 2 tbsp honey (or to taste)(for seasoning)
- 2 tbsp sugar (or to taste)(for seasoning)
- 1 tbsp Shaoxing cooking wine (or to taste)(for seasoning)
- 1 tsp sesame oil (or to taste)(for seasoning)
- 1 tsp ginger juice
Method :
- Cut pork into long strips of about 6 to 8 cm width.
- Combine all seasoning ingredients and mix well.
- Coat pork strips with seasoning mixture. Cover and leave to marinade overnight in refrigerator.
- Allow pork to return to room temperature before cook.
- Brush seasoning mixture all round pork strips again.
- Air fry pork strips at 200C for 5 minutes.
- When time’s up, adjust air fryer temperature to 140C for another 10 to 20 minutes or till your desired color and doneness. If you prefer it to be more burnt, adjust to highest temperature of your air fryer for further cook for 4 to 5 minutes.
- Remove from air fryer. Allow to rest for 15 minutes before cut and serve.
