Steam Fish Canapé with Chinese Black Beans and Frozen Mixed Vegetables



We know steam fish is good for us. Healthy food, however, may not be tasty at times. This post is about adding flavors and colors to my healthy but bland steam fish....



Ingredients for Steam Fish (enough for 2pax) :
  • 4 thick slices of fish (approx. 2 cm per slice)(Use any type of fish you prefer. I am using threadfin. Cod fish could be ideal to hold the black beans dressing nicely.)
  • 3 slices of ginger (thinly sliced or shredded)
  • a little spring onions (finely chopped)
  • a pinch of salt


Ingredients for Black Beans Dressing (enough for 2pax) :

  • 1.5 tbsp fermented black beans
  • 1 cup of frozen mixed vegetables
  • 1 small onion (finely chopped)
  • 3 cloves garlic (finely chopped)
  • 1 tbsp light soy sauce
  • 1 tsp sugar
  • few drops of sesame oil
  • 1 tbsp cooking oil


(tsp = teaspoon; tbsp = tablespoon)    


Tip : For convenience, you may use canned or bottled black beans available from markets/supermarkets. 


Method :

Pre-marinate fish with a pinch of salt. Oil a plate with few drops of cooking oil. Then assemble fish, ginger shreds and spring onions onto plate. Steam for 15 minutes till cooked.
Heat 1 tbsp cooking oil in a separate skillet/wok and saute finely chopped onion and garlic at medium heat.
Add black beans and turn to medium-high heat.
Add frozen mixed vegetables, 1 tbsp light soy sauce, 1 tsp sugar, few drops of sesame oil. Toss for a minute or 2 till ingredients are fully cooked.
Turn off heat and transfer ingredients and sauce to serving bowl. It would not take you more than 5 minutes to prepare and cook the black beans & mixed vegetables dressing.
Assemble fish, dressing and spring onions....and we are good to go! That would add colors and flavors to the otherwise bland steam fish slices.
